SMALL SCHOOL OF GASTRONOMY Traditional and innovative recipes is a brochure that will inspire you to use traditional products and old varieties either in delicious traditional dishes or to make some of your own modern gastronomic fantasies. 

Through direct collaboration with small producers of the local products and lectures about the value of local food and gastronomic offer diversification, small school participants, mostly young people and students of tourism, worked on new ideas of gastronomic offer in Herzegovina. Special attention was given to local products. Chickpeas are full of protein, and possibly they can also be used in cakes. Old varieties vetches and corn represent wealth nutritional contents and special tastes. Poljak beans, old salt, corn, Trebinje figs, pomegranate, blackberry and homemade cheeses, skrivac and mixed cheese, are the main ones the protagonists of the dishes prepared by the students with their mentors.
